It contains anthocyanins, flavones and tannins. The rufous liquid color is soluble in water, but insoluble in oil and absolute alcohol. At PH 2.0-7.0, the color is yellow and stable; at PH above 7.0, it is salmon pink or rufous. Application: it can be used in the coloring of pastry, candy, cakes, condiment, pickle, essence of chicken and puffed food. Package: Liquid: polythene barrel; or according to clients demands Storage: protected from light and heat. Stored in cool, dry and airproof. Gardenia Blue Color It is a kind of natural edible pigment extracted from gardenia fruit of rubiaceous plant. The main compositions are crocin and cricetin of series of carotinoid pigment. The powder from light gray to smalt is soluble in water and solution of water and alcohol, but insoluble in organic solvent. The environment PH value has little influence on its hue and stability. Application: it can be used in the coloring of wine, carbonic acid drinks, juice drink, jam, jelly, candy, cakes, ice-cream, pastry, and puffed food.
